Hello honey, I’m one of a kind is a collection of the most exclusive Finnish mono-floral honey varieties. Bees have visited mostly in the flowers of a specific plant. This gives unique characteristics to each one of a kind mono-floral honey: taste, texture and color are affected by plant origin.
In Finland dandelion (Taraxacum officinale) is the most important early blooming flower for bees. If the summer begins in warm temperatures, there comes the possibility to produce dandelion honey.
The dandelion honey has a yellow color which varies from lemon yellow to canary yellow. The scent of dandelion honey reminds of Northern woolen sock, which has gotten wet during the archipelago boat trip. The taste of dandelion honey is mild, not too sweet and it has a minor aftertaste of liquorice. The dandelion honey is finely crystallized by its texture.
