Hello honey, I’m one of a kind is a collection of the most exclusive Finnish mono-floral honey varieties. Bees have visited mostly in the flowers of a specific plant. This gives unique characteristics to each one of a kind mono-floral honey: taste, texture and color are affected by plant origin.
Sweet clover (Melilotus albus) has really tiny flowers, but it is a great plant for both soil and pollinators. I farm it so I can produce sweet clover honey.
Sweet clover honey is pale, but not quite as pale as phacelia honey. It has an exceptionally sweet taste. Sweet clover honey is a great choice for desserts. The texture is soft, but you can feel crystals of the honey.
